In the spring of 2018, the keto diet made a comeback from its 1920’s roots. The diet was originally created to treat epilepsy. Keto is a low-carb, moderate protein, and high-fat containing diet that doesn’t make you feel like you are starving or missing out on foods you crave. A diet where you can have delicious dessert and not feel guilty and cure your Type 2 diabetes? Yes, it’s true.  

Keto diet by far has the largest list of snacks and desserts I’ve ever seen on a diet. You can enjoy these delicious desserts that will send your body into ketosis and have you burning off your fat in no time! How many diets do you know where you can have ice cream, brownies, cheesecake? The recipes contain very few ingredients and some are no bake. These desserts aren’t made with refined sugars. No, they contain sweeteners our body won’t hold onto as fat. When we take sugar out of the equation, our bodies start burning fat or ketosis.

Keto -Friendly Desserts

Here’s a great brownie recipe from This recipe only requires 6-7 ingredients.

  • 9 tablespoons unsalted grass-fed butter or TBS coconut oil + 1 TBS coconut cream if paleo
  • ⅔- 1 cup xylitol powdered erythritol or coconut sugar if paleo
  • 11 tablespoons cocoa powder
  • ½ teaspoon kosher salt
  • 2 eggs at room temperature
  • ¾ cup almond flour
  • Garnish
  • Flaky Sea Salt
  1. Position a rack on lower 3rd of the oven.
  2. Preheat the oven to 350.
  3. Line an 8×8 inch pan with parchment paper.
  4. In a medium bowl, add butter, sweetener, cocoa powder, and salt. Melt in the microwave and mix every 10-15 seconds to prevent burning or using water bath whisking. You want most of the sweetener to have melted. Remove from heat and allow to cool slightly.
  5. Add one egg. Whisk. Add 2nd egg and whisk again. If the mixture is too thick you can add a 3rd egg (happens with xylitol).
  6. Add almond flour, whisk until fully blended (about a minute).
  7. Bake between 15-25 minutes (23 with xylitol and 17 with erythritol). Use a toothpick to see if the center is set at 15 minutes mark. Keep in mind: brownies continue to cook while they cool.
  8. Sprinkle flaky sea salt and allow them to cool completely before serving. Cute them up into 16 pieces. One piece is equal to a serving. Here’s a how-to video.

Super Fudgy Creamy Cheesecake Brownies

Ingredients for cheesecake layer

8 oz cream cheese softened

¼ to ⅓ cup sweetener (¼ for xylitol)

1 egg at room temperature

1 teaspoon extra vanilla

Ingredients for keto brownie layer
  • 9 tablespoons unsalted grass-fed butter
  • ⅔ to 1 cup sweetener (⅔ cup xylitol)
  • 11 tablespoons cocoa powder
  • ½ teaspoon kosher salt
  • 2 eggs at room temperature
  • ¾ cup almond flour
  1. Position rack in the lower third of your oven and preheat your oven to 350 degrees Fahrenheit. Line the bottom of an 8×8 pan with parchment paper.
  2. Make the cheesecake layer first. Add cream cheese and sweetener to a bowl. Use an electric mixer to mix ingredients together. Whisk until creamy and smooth. Mix in the egg and vanilla extract until combined. Set aside.
  3. Add butter, sweetener, cocoa powder, and salt to a medium heatproof bowl. Melt over a water bath or you can use a microwave. Do 10 sec increments and mix.
  4. Allow mixture to cool
  5. Whisk one egg in at a time. The texture should be smooth. Add the almond flour, whisk until fully blended.
  6. Pour ⅔ of the mixture into prepared chocolate mixture
  7. Pour the cheesecake layer.
  8. Add the remaining brownie batter in 4 dollops and swirl the two batters together using a knife.
  9. Bake for 15-25 minutes or until the center is just set and still jiggly. (varies with different ovens). Check them at 15
  10. Allow brownies to cool. 
  11. Cut into 16 pieces. One piece is a serving.

Chocolate avocado cookies!

Here’s a video guide. 

Don’t worry, you’ll barely taste the avocado. No butter necessary, the avocado does the same thing.

  • 1 large ripe avocado
  • 1 large egg
  • ½ cup unsweetened cocoa powder
  • ¼ cup unsweetened shredded coconut (optional)
  • ¼ erythritol
  • ½ tsp baking powder
  • ⅜ liquid stevia
  • ¼ tsp pink salt
  1. Avocado- dice in its peel. Put it in the bowl and mash it up.
  2. Dice the avocado in the peel and add to a large mixing bowl. Mash with a fork.
  3. Add the egg, erythritol, stevia, and salt and combine using a hand mixer.
  4. Add the cocoa, coconut flakes, and baking powder and combine.
  5. Using a cookie scooper, scoop out 9 cookies onto the baking sheet. Using a spoon or your finger, spread the cookies out.
  6. Optional, top with Lily’s chocolate chips or shaved bakers chocolate. Bake for 10-12 minutes until firm.
  7. Allow the brownies to cool for five minutes prior to handling.
  8. Store in the fridge for up to a week.
